Ibis – Bar & Restaurant

Ibis Brisbane was to be a test case for optimising bar sales and dining room covers. Designing spacial flow, sensory engagement, interior design, styling and full fit out including designing and building a new bar. It all started with an internal manifesto. We even liaised with the chef to re-write the menu.

We are a restaurant. Our beef is from the same cows, our chickens and eggs are free range and our salt is from the same sea (as is our fresh fish) as any other good restaurant. There’s nothing different in our beer, our wines still started life on the vine and if you mention whisky to the barman he’ll introduce you to a rare single malt from Scotland he once tried. You can ask for mustard, have still or sparkling and get a steak just the way you like it. We use olive oil, we use butter and our kitchen has the same (if not better)equipment than most restaurants in town. So the only thing we need to remember to turn Ibis hotel dining into Ibis Bar and Grill are the 3 p’s of restaurants…Presentation, presentation, presentation.
